(8/2015) Wow! What a great bottle of bubbly! The Cava house of Mestres is based in the village of Sant Sadurní d'Anoia, right in the heart of the finest area for Cava in Penedès. This bone-dry sparkler spent 40 months on its lees. (Most Champagne spends only 15 months!) The blend is a traditional 40% Xarello, 30% Macabeo and 30% Parellada, some of which is aged in old chestnut barrels. With a wonderfully rich texture, precise acidity and flavors of honeyed, nutty orchard fruit, this serious bubbly could easily be mistaken for a $40 Champagne!

This bone-dry Spanish Cava is drop-dead gorgeous! Delicious and ripe orchard fruit flavors are just the beginning. This complex bubbly is a classic blend of Macabeo, Xarello and Parellada from organically farmed slate and claylimestone soils in the heart of the Penedes. The twenty-plus months that it spent on the lees added wonderful notes of yeast and fresh baked brioche that are followed by white floral tones and a delightful nuttiness. There is a serious level of quality here for a sub-$20 sparkler.

(11/2015) The latest batch of this all-purpose Spanish sparkler is totally fun and delicious. Making things even better, we've been able to get the price down significantly to just $9.99! Crisp and refreshing, the Sonim Brut Cava bursts with bright green apple and fresh lemon-lime zest along with a subtle, complexity-adding minerality. The long finish has just a touch of RS to put everything in balance. A strong candidate for our best sub-$10 sparkler, Sonim is a great value to serve at parties, use for mimosas or to bring to your favorite Thai, sushi or Indian BYOB spot.

(12/2016) Don't let our low price fool you, this is one tasty and serious Cava! Although labeled as "NV," it is made solely from the 2013 vintage. Produced using the Metodo Tradicional (Champagne Method) it offers wonderful depth and - given the price - quite unexpected complexity. Delicious fresh apple and pear flavors are layered with notes of dried flowers, bread dough, hazelnut, toast and a streak of minerality. This all-purpose sparkler is bright and medium-bodied, making it a great choice for large social gatherings. There is also enough structure here to enjoy with spicy Asian cuisine or fresh seafood!
