Aged 30 months on the lees with no dosage, the secondary fermentation liquid, the "Prise de Mousse," is actually Vin de Paille (the dried grape elixir that costs big bucks) This wine in Magnum is so exciting!

Domaine des Marnes Blanches Cremant de Jura NV

(4/2017) Pauline and Geraud Fromont, natives of the Jura, began Domaine des Marnes Blanches in 2006 as ambitious 20-somethings with a background in farming. Their vineyard holdings are spread throughout three villages within the Jura, the first located in Cesancey, which features their namesake "white marl" soil. Their natural sensibility, which is common among winemakers in the southern part of the Jura, begins in the vineyard where they have farmed organically since the opening of the domain. They practice minimal intervention in the cellar, from native yeast fermentation to low sulfur addition and only when necessary. Their cremant is produced from 100% Chardonnay fermented in stainless steel prior to spending between 12 and 16 months on the lees and bottled with no dosage. The nose bursts with citrus and tropical fruit, while the palate gives satisfyingly rich texture integrated with a fine mousse. Completely dry, with notes of honey, apricot, and almond. This would be really great with some hard salty cheese and charcuterie.

When our tasting panel tried this for the first time, all we could say was "wow!" The looks on our faces were priceless. Champagne is certainly not the only source in France for high quality, complex and thought provoking sparkling wines. The term Crémant is reserved for seven appellations throughout France that produce sparkling wines by the same method used in the great region of Champagne. The Jura (located due east of Burgundy and just west of the Swiss border) received approval to produce Cremant in 1995. This delicious bottling is 50% Chardonnay and 40% Pinot Noir with the local varieties of Trousseau and Poulsard making up the remaining 10%. The wine sees no dosage (the addition of sugar after the secondary fermentation) and the result is a bone dry "extra brut" wine with crisp and mouthwatering acidity complemented by a creamy palate. The finish is lengthy with subtle hints of nuts. This is a great substitute for Champagne if you're looking to increase value without sacrificing quality. You'll find it being poured by-the-glass at some of Chicago's top restaurants such as Brindille, Sepia, The Boarding House and Pops!

(11/2014) This traditional method bubbly comes from the Jura region of Eastern France. Blending Pinot Noir, Poulsard and Trousseau together to produce a beautiful, deep salmon pink colored Rose is masterfully done by the Tissot family. Look for tart red berry fruit notes that are fresh and juicy - an excellent value French sparkling Rose!
