Ripe with pear, melon, and stone, and simply delicious! Direct pressing of the whole grape clusters upon arrival in the cellar and the juice undergoes 48 hours of cold settling. The wine is then racked off the lees and transferred to traditional underground glass tanks for fermentation. Spontaneous fermentation using only the naturally occurring indigenous yeasts. A low dose of sulphur is added at the end of alcoholic fermentation. No battonage and the wine does not undergo malolactic fermentation.
