Stainless steel fermentation with some skin contact provides a beautiful balance with crisp wet stone minerality and a silky, round mouthfeel that carries into a clean, lengthy finish. Pair with firmer seafood such as grilled swordfish with citrus relish, or with pasta with a white bolognese sauce.
