(5/2021) Culled from a unique blend that dates back to 1997, the Solera combines 50% Chardonnay and 50% Pinot Noir all grown from their biodynamically farmed vines within Mareuil-sur-Ay. Every year, 30% of the large Solera is racked off for secondary fermentation and replaced with 30% new wine. The result of this painstaking process is a wine that manages a continuous representation of terroir. This batch, disgorged in the autumn of 2020, is gorgeous. We drank our sample bottle over several days to experience the full depth of what this bubbly offers. With air, the serious complexity and length of Solera's flavor are gloriously revealed, including notes of nectarine, lemon butter, apple blossom and honeysuckle. With each ever-quicker sip, you'll delight in the pure mineral-themed, citrus-tinged, white rock tones only seen in great Champagnes. A limited-quantity sparkler that will drink gorgeously now and over the next 5-10 years!
