Winemaker's Notes
Hand-harvested over the second half of October. Spontaneous fermentation with 60 days of skin maceration before aging in 3000 liter oak barrels for 45 months. Persistent, evenloping tannin supports notes of undergrowth, red fruit and violets. An austere and elegant wine to pair with game, grilled meats, mushrooms, roasted meats and seasoned cheeses. No sulfites added.
