Winemaker's Notes

Arch-Traditional Barolo producers, eat your heart out: This powerfully tannic red skin-macerates in underground clay vessels for 105 days! This is the most noble of Georgian red grapes, Saperavi, and here it flies at full-mast. Now released after a long slumber in bottle, it's rounding out its intensity with notes of black cherry, blackberry, black plum and black currant with spicy black pepper and capsicum, and complexity of tobacco, chocolate and mineral tones. Pairs with red meats and heavily aged cheeses - this one is serious.
