As a renowned grower in the famous Rheingau region of Germany, it is only fitting that Johannes Leitz would first introduce the Riesling as an alcohol removed wine. With its brilliant German acidity and vibrant aroma, Riesling is perfectly suited to the gentle process of alcohol removal. Leitz was the first to demonstrate that high quality raw material makes an important difference in a non-alcoholic wine, and Germany grows the very best! Innovations in vacuum distillation have improved in recent years, and Leitz found a producer in Rheinhessen who recently patented a new, completely closed system that allows wine alcohol to boil at 28°C, preserving 'wine-like' aromas and characteristics. Much like fat, alcohol is a transporter of flavor, and without it, there needs to be something else to carry its flavors to the receiver. Residual sugar does the work for these, though the sugar is nearly eaten up by acidity.
