(8/2025) This is a blend of 70% Sauvignon Blanc and 30% Sémillon that is 100% destemmed. Direct grape crushing, very softly. Partial fermentation in stainless steel vats with indigenous yeasts. Aged on the lees in stainless steel tanks, then bottled before fermentation is complete. The bubbles form naturally in the bottle. Minimal filtering after 2/3 of the fermentation. No sulfites added.
