A fantastic unicorn of a Champagne, the Eye of the Partridge is a historic way to make rose Champagne by using 24 hours or less of skin contact, resulting in a pale salmon hue. When Champagne exports started to boom, they found that people preferred a pinker-looking rose and switched to blending in still red wine to achieve color. Almost 50 years ago, Jean Vesselle found some older vintages of the Eye of the Partridge hidden in his cellar and was so enamored he decided to start making it again. And we are so glad he did!! This wine is scrumptious!

(11/17/2023) Made from 100% Pinot Noir, the NV Champagne Oeil de Pedrix Brut has a pale salmon hue and a very pretty perfume of rose water, orange blossom, and peach. Elegant and medium-bodied, with pithy grapefruit citrus and salty minerality, it should improve over the next 10-15 years.
