(12/2022) A blend of 40% Chardonnay, 25% Arbanne, 25% Petit Meslier and 10% Pinot Blanc from twin brother growers Pierre and Philippe Aubry. Their use of lesser-known grape varieties is cool, but not nearly as exciting as the riveting quality of the wine inside the bottle. This densely textured bubbly was raised in stainless steel with a small part of Chardonnay in used barrique. The wine shows baked pear, banana, spice and river stone earth. Long and full, it's a deeply satisfying bubbly to have with flavorful dishes.
