Aged in glass vessels with living agave penca leaf, Fosforo Tobala Penca Mezcal is a rare expression that bridges traditional craft and quiet innovation from the highlands of Puebla. This is mezcal as it was meant to be experienced: unhurried, layered, and deeply rooted in place. Produced by Master Distiller Aaron Alva Sanchez in San Nicolas Huajuapan, Puebla, this tobala mezcal begins with agave roasted for five to eight days in underground earthen pits, followed by a ten-day to two-week open-air fermentation. The spirit is then double distilled and rested for one to three months in glass vessels alongside agave penca leaf, a finishing technique that gently reintroduces the plant's green, herbaceous character to the final spirit.
