Made from 100% farm-grown agave in Santa María Suchixtlán in the Mexican state of Oaxaca, crafted by Maestro Mezcalero Filogonio Cruz. The agave is harvested around 7-9 years old, the piña bakes 4 days via palenque in a traditional cone oven at ground level. The hearts are ground using a stone mill pulled by a pair of oxen, that ground agave pulp is fermented for 6-8 days under the open sky in cypress wood barrels - finally, double copper distilled. Subdued aroma of sweet smoke and overripe fruit. Herbaceous with a slightly minty finish with hints of violets and pineapple. Tastes of baked pineapple with notes of coconut, roses and freshly cut herbs. In the mid-palate there are ripe peaches and cinnamon with hints of white pepper and a fine taste of sherry jelly on the finish.
