(10/2026) With a commitment to organic farming, hand harvesting, and wild yeast fermentations, Isabelle and Denis Pommier are turning out some of the most delicious and, quite frankly, underpriced bottlings of Chablis out there. Here's an absolute steal of a 1er Cru that comes from their tiny, 1ha parcel in Côte de Léchet. This jaw-dropping Chablis comes from 60-year-old vines planted deep into the vineyard's signature Kimmeridgian slopes and was aged for 18 months in a combination of tank and used barrels. Showcasing a mindblowing depth of mineral, oyster shell, and chalky earth, this bright and mouthwatering white is a total joy to drink, offering a mouthcoating texture, purity of fruit, and a very lengthy finish. While it has the potential to age for 10 years, good luck keeping your hands off of it for that long!
