(9/2026) Harvested from their 25 year old vines, this is a prime example of what a steadfast commitment to organic farming, wild yeast fermentation, and focus on quality over quantity can do. Unlike their 1er Cru wines, Isabelle and Denis forgo the use of oak with their Hautériven bottling, providing it six months on the lees in stainless tank before bottling. The result is just right. Leading with notes of pear, lemon, and oyster shell, this clean, mineral-driven Chablis is pure and zippy with a nice, saline-tinged finish.
