(2/2026) A venerable Vin Chicago favorite is back with a racy, invigorating installment of a perrenial class-leading bottling! Achieving some of its lowest ABV and pH levels since its inception - it's a vintage of verve with notes of lemon leaf, nettles, gooseberry, green apple, peach, guava, lemongrass, pear blossom and river pebbles marking this young, highly aromatic New Zealand Sauvignon Blanc. The snappy, dry and texturally exciting profile is still here and defines Greywacke as a step above for this extremely popular category.

(4/23/2026) The 2025 Sauvignon Blanc leads with a soft nose of musk sticks and brine, green apple skins, wet linen and green olive tapenade. In the mouth, the wine is tightly coiled and yet textured by pithy phenolics. The length of the flavor is long, as we have come to expect from Greywacke Sauvignon Blanc. This is a superb wine in any vintage. Drink Date: 2026 - 2035.
