Winemaker's Notes
This cuvee is a blend of Cinsault and Grenache from Saint-Julien-en-Saint-Alban. The blend, which may vary slightly depending on the harvest, is around 75% Cinsault and 25% Grenache. During vatting, the Grenaches are de-stemmed and the Cinsaults whole bunches. Vatting lasts about a week - the length of vatting depends on the speed of fermentation. After pressing, the wine will finish fermenting in concrete vats, will be racked once to clean the wine to spend the winter in concrete vats. The wine is bottled in the spring without filtration.
