(5/2021) There are a few routes we could take in introducing this wine to you. We could mention that Elbling is one of the oldest and mysterious varietals in all of Europe, its origins still argued over. Or, we could wax poetic about winemaker Mattias Hild’s unbelievable desire to save all the small parcels of Elbling grown in Obermosel. The thing that really struck us when we first tasted these bubbles, though, was the simplicity and honesty it portrays. Lightish-bodied, limestone, chalky goodness in a bottle. Refreshing and a joy to drink, we like to think it means the same here in Chicago as it does in Germany. A great bottle to pop with some friends.
