(4/2023) Xavier, ever the alchemist, harnesses the power of Chateauneuf's greatest red grapes to craft this magnificently textured, vivid, palate-staining white. 40% Grenache Noir, 25% Mourvedre and 5% Syrah are supplemented by 10% Roussanne, 10% Grenache Gris, and 10% Grenache Blanc to make a layered white which captures a magical slice of power, texture and freshness in one package. A wild melange of florals sits hand-in-hand with salted melon, waxy yellow orchard fruits, grilled white peach, lime zest, honeysuckle and goldenrod. Heaping with minerality, the palate is incredibly penetrating and ridiculously long-finishing. A contemplative wine to serve at cellar temperature with significant aeration. Xavier recommends a scallop risotto, we concur - slip some saffron in there - and grill a swordfish steak too. This wine is unreal!
