(11/2022) The co-fermented Garnacha (70%) and Xarel-lo (30%) for this tongue-tingling Cava come from Pere's five-hectare, organically-farmed vineyard. While labeled as a non-vintage, the fruit is entirely from the 2019 harvest. Allowed to rest on its lees in the bottle for a full 24 months is a serious investment for a sparkler of this price when Champagne itself only requires 12 months. Packed with fresh red berry fruit and a fine bubbly mousse, this vibrant sparkler is seriously well-crafted. Notes of spring blossom, white pepper and sage rest atop a foundation of river stone minerality. The bubbles are lively, dancing in the mouth with each sip.
