(12/2022) Vin Jaune is made from 100% Savagnin and undergoes a totally unique aging process. During its minimum of six years in barrel, more than one-third of the wine evaporates. As this happens, a protective layer called the “voile” (aka veil) forms over the wine, contributing a very distinctive flavor to the final precious liquid. The taste is somewhere between an aged White Burgundy and an Amontillado Sherry, with brisk acidity and minerality supporting rich tones of honey, marzipan, macadamia, yellow flowers, lemon custard, smoked banana and oven-roasted yellow apple. Fun and delicious!
