(12/15/2025) The NV Champagne Premier Cru Dizy Cuvee 791 Extra Brut is composed of pure Chardonnay from the 2022 vintage, with approximately 15% reserve wine from the same plot. Aged 30% in amphora (which adds tension) and the rest in demi-muid, with no malo, dosage is 3 grams per liter. Boasting a bright, medium yellow hue without showing any signs of oxidation. The wine is medium to full-bodied and offers notes of cherry, custard, citrus oils, and ripe red fruit, complemented by wet stone and a refined frame. I love the core of intensity that all of Paul Froissart's wines bring, and this one has a depth to its intensity that goes through the midpalate, the way you would expect with Blanc de Noirs. It's a fabulous wine with an elegant mousse, refined, delicate, and airy, and the smoky frame adds another layer. Drink 2025-2045.
