(5/16/2024) There is a change in the 2021 Dido Blanc. More and more, they like skin-contact whites; so, they have increased the skin contact that started in 2018, and in 2021, they went for the full Monty: some 40% fermented with skins for almost two weeks. They like the wine; the part of Garnacha and Xarel.lo on granite are direct pressing. The wine has a golden color; the profile has changed, and it's more 'orange.' This 2021 has had some time in bottle, and the wine is easier; when bottled, they might be too sharp and straight. The aromatics are subtler also after the time in bottle (something very important for these whites, as the wine needs time in bottle). It's both voluptuous, elegant and fine-boned, with notes of yellow fruit, pollen, spice and dry flowers. It has a textured palate with some fine tannins, moderate ripeness and alcohol (12.79%) and a long, dry finish. They kept the wine in used foudres and barriques for 12 to 13 months. 13,566 bottles and some larger formats were produced. It was bottled in December 2022. Drink date: 2024 - 2030.
