(5/2025) The Genet siblings craft this organically-farmed rosé exclusively from the Grand Cru village of Chouilly in the Côte des Blancs. Here, the 92% Chardonnay is assembled with a rarity in this town: 8% barrel aged Coteaux Champenois still Pinot Noir, for its color - and a dash of indulgent gravity. Aged on lees for 36 months before finishing with an 8g/L dosage, the prevailing personality is in keeping with its Blanc de Blanc underpinnings. There's a synergy to its minerally soil notes sprinkling atop lemon-curd rubbed grilled bread, fresh golden apple, toasted hazelnuts and petrol with dashes of strawberry underneath.
