(4/2024) From a six hectare estate west of Carcassonne in the Languedoc comes this no-intervention, unfiltered dry sparkler made of Chardonnay and Souvignier Gris. That rare second variety is uniquely resistant to some tradtional viticultural risks and needs less water than most - perfect for hands-off, harmless viticulture and dry farming in France's rugged Sud. Nothing is added, and we have a resultant funky-yet-friendly light bubbly presenting racy sour green apple, lemon twist, muskmelon, almond cookie crumbles and dried white florals. NF:3
