Pet-Nat is a style that is newly ascendant, but is rightly called methode ancestrale, being as old as the hills. Our Pet-Nat is 100% Cabernet Franc from the Seven Hills Vineyard and was harvested early in order to retain its acidity. The fermentation began in stainless steel and, as it got close to dryness, it was transferred to the bottle to finish fermentation; no sulfur was added at any point. The wine remained on the lees until April 2023 when we disgorged it and let it rest for a few months. We call it 'PoET-NAT,' well, just because. 100% Cabernet Franc Pet-Nat from MS/MW Doug Frost.
