What Critics Think
Vinous - Joaquin Hidalgo : 95 Points
(4/2024) Imagine a solera started in 1790, filled with Pedro Ximénez aged for up to 35 years as a non-fortified wine. Bottled from this remarkable system, you have the NV Amontillado Carlos VII—a very different creature from any other Spanish wine. Light mahogany in hue, it presents herbal and licorice aromas alongside notes of saffron, oak and mushrooms, with hints of dried fruit. Complex and lean, the palate is rich in umami and lingers long on the aged notes. This offers a unique taste that beautifully combines heritage and individuality. Drinking Window: 2024 - 2038.
Decanter : 94 Points
(8/13/2023) Carlos VII is a glorious copper colour, the product of its 30 or so years of age. It began as a fino, unfortified and aged under flor, and then oxidatively with the death of the flor. Wonderfully aromatic, with mahogany, vanilla, walnuts and muscovado sugar. In the mouth it’s piquant, citric, smooth and very long. Textbook amontillado from Montilla-Moriles. Drinking Window: 2023 - 2030.

(12/1/2025) Alluring bread dough aromas meet with brioche and pastry on the nose that draws you in and keeps you there. The rounded palate has a streak of spiced savoriness that leans into dried hay and browned butter. Made from 100% Pedro Ximénez this wine impresses.
