(8/2026) This baseline Chablis from Thierry Laffay offers wonderfully classic aromas and flavors of green pear, crunchy red apple, preserved lemon peel with pronounced secondary notes of dried white flowers, oyster shell, and a deep chalk minerality. The palate is medium-bodied with a round texture and mouthwatering acidity, making this an excellent choice for chilled shrimp cocktail, Conserva, freshly shucked oysters, and chicken or fish simply grilled with olive oil and lemon. Yum!
