Winemaker's Notes

Fermentation begins spontaneously after a few months and proceeds very slowly until the minimum alcohol content of 8.5% is reached. At this point, the wine is filtered once and bottled. Resuming fermentation in the bottle makes the wine nicely sparkling, and stops spontaneously due to the internal pressure reached.
