Winemaker's Notes
"100% Cabernet Franc is hand-harvested, brought to the winery by a horse, destemmed and gently pressed. Only natural yeasts are used and the juice undergoes an extended maceration. Aged in old oak barrels. Ripe plum, juicy cherry, red apple core and chalk tones dominate the nose. Crushed strawberries mixed with invigoratingly fresh Bing cherry and red apple flavors explode on the palate."

(6/2018) (6/2018) Now in semi-retirement, Olivier Cousin chooses only to work with "Breton" (Cabernet Franc), of which he produces some of the best natural wines available. Farmed biodynamically from 40-year-old vines, vinified with indigenous yeast and without added sulphites, his "Pur Breton" is worthy of its namesake. Bright and ripe over a layer of earth, this medium-bodied wine is loaded with plum, cherry and chalk on the nose with the addition of fresh red berries on the palate. As both an example of Anjou Cab Franc and natural winemaking, "Pur Breton" is essential. Drink now through 2023.
