(3/2018) The Caraccioli family has been farming row crops in and above the Salinas Valley for over 50 years. In 2006, they decided to get into the wine business and - because their cool climate, high elevation vines yielded such amazing acidity - decided to focus on sparkling wines. Each year, however, they bottle a few hundred cases of still Chardonnay. Though it comes from the Central Coast of California, this bone-dry Chardonnay tastes more like a Chassagne-Montrachet, and it is simply outstanding! Sourced from 34-year-old vines grown in sandy-loam soils, it was fermented in stainless steel then moved to French oak, 25% of which was new. Because the Caraccioli family is not interested in overt new oak flavors, the wine only spent a few months in barrel. The first thing you'll notice when you taste this wine is the intense acidity and minerality, followed immediately by a complex array of citrus and orchard fruit flavors with slight suggestions of honey and almond. The wine finishes with long, nervy, electric acidity, making it a perfect choice alongside oysters, spicy Thai soups, sushi, roast chicken or pasta with cream sauces.

Winemaker's Notes
We picked Santa Lucia Highlands for a reason-it's the perfect location for Pinot Noir. The fog and breezes off the cold Monterey Bay waters cool the hillside plantings that are perfectly situated under the afternoon sun. After night harvesting, the grapes are cold soaked for three days. Punch-downs and pump-overs are used to get the best flavor and color. After fermentation, the juice is carefully pressed and racked into barrels and undergoes malolactic fermentation for softness and complexity.
