(9/2022) The 2020 Chablis Vau de Vey 1er Cru, from mainly marn soils, raised in four demi-muids for 15 months after which is transferred into vat, was showing a little more reduction on the nose than de Moor's other cuvees. The palate is very well balanced with a steely line of acidity that lends this Vau de Vey superb linearity; it is quite persistent with a saline finish. This will need cellaring if you want to see it in full flight. Drinking Window: 2025 - 2040.
