Winemaker's Notes

Whole Cluster, whole berry, intracellular stomp-downs. Picked from a singular, 1 acre, steeply terraced slope fed by underground springs coming from the heart of the mountain. The clusters are picked in multiple passes and gently placed in a bin, beginning a carbonic process before being regularly foot-stomped morning and night for two weeks. Pressed into puncheon to continue fermentation, and aged on lees for 16 months.
