(7/2025) Here's a real rarity, a traditional method sparkling Hondarrabi Zuri from a new fave Txakolina producer of ours. The racy mineral edge that we know from their less foamy bretheren is still on-display, but you pick up a touch of pastry and a broader, creamier texture from the rack-riddled 14 months on lees before disgorgement with seemingly little-to-no dosage. Focussed, with pure crisp white pear, riverstones, lemon zest, and dried herbs - this is a great food wine and invigorating Cava upgrade for drinking now.
