A rarity, but a category we hope to see more: the terroir of Manzanilla Sherry's Sanlúcar de Barrameda in a neo-classic unfortified and more conventional white wine model with modest alcohol. From 0.9 hectares of own-rooted Palomino vines planted in 1945. Low-intervention winemaking, enhanced lees contact and bottled unfiltered. Cool!

(12/2023) The 2021 Palomino Univers is sourced from Pago Miraflores in Jerez. It has a golden color and offers aromas of bakery, lime and peaches, complemented by chamomile and floral tones. Dry and chalky, it is a refreshing and intensely flavored wine. Drinking Window: 2024 - 2031.
