The Pet Nat Red is 100% old vine Dornfelder. Carbonic Maceration for 8 days in stainless then bottled during the tail end of fermentation to create the delicate fizz. Philipp loves to refer to this wine in the cellar as “vampire soda”, 9.5% alcohol.
