Distiller's Notes

This Lightning barley is essentially brand new to the world, seeking to advance the knowledge of strains of barley that are healthier, a two-row winter barley with the additional benefit of being free of glysodic nitriles. Aged almost four years in five barrels, four re-toasted and charred to #2 char, one to #3. The remarkable character and complexity of this whiskey, plus texture of Pinot Noir Brandy inclusion (17%) justified bottling at the four-year mark. 'Sticky' reverse osmosis filtered water was used to water to a round 100 proof. Just 125 cases bottled.
