Winemaker's Notes
The 2023 Natura Morta Dolcetto comes from an organically and dry farmed vineyard with volcanic soils. The grapes were harvested on the sixth of October with low sugar and high natural acidity. The grapes were fermented 30% whole cluster using pumpovers for cap management to reduce tannin and allow a semi-carbonic fermentation to occur in the whole cluster berries. The wine was pressed off after eight days to retain freshness and preserve levity. After finishing primary in a stainless steel tank, this wine was racked to neutral French oak puncheon to rest for six months before bottling.
