Stellum "Vin Chicago - Barrel Eight" Cask Strength Straight Bourbon Whiskey

The Stellum team does not disclose the exact age of their spirits, but we know this is older than five years and younger than eight. The mashbill here, as with all of today's Bourbons, is 74% Corn, 21% Rye and 5% Malted Barley. Checking in at 113.3 Proof, Barrel Eight leads with spice and subtle Rye notes. It reminds us a bit of aged Calvados, with delicious baked orchard fruit and finely nuanced oak flavors showing through in an appealing manner. Featuring sophisticated notes of Newtown Pippin apple, Rainier cherry, vanilla bean, crème brulée, allspice and white pepper, it is both yummy and highly civilized. With its “High Rye” proclivities and lifted primary wood tones, it finishes with warmth and alluring spice.
