(6/29/2018) The second vintage of this new top-of-the-range white, the 2017 Fosil San Pablo is made with Chardonnay from a vineyard in San Pablo, cropped from a slightly warmer and riper year. The wine fermented exclusively in concrete and also matured there. In fact, they also fermented and matured part of the wine in oak cask, but they didn't like the result and, therefore, didn't add it to the final blend. So, the bottled wine is exclusively produced in concrete. It feels a little riper and rounder, with less complexity than the initial 2016; it's more approachable and easy to understand, but to me, it's also simpler. However, it's still a great white, but comparisons can be tedious... 2,600 bottles were filled in February 2018.
