(8/2019) Biodynamically produced from 90% Viura and 10% Garnacha Blanca, it is fermented in concrete then pressed off and placed in old French oak barrels for six months. The wine is then transferred back to stainless steel tanks where roughly half of the juice goes through malolactic conversion. The resulting wine is beautifully complex, with a golden orange hue and a slightly woodsy, oxidized style that is classic white Rioja. On the palate, this rich, completely dry and creamy wine offers fruit that leans to the citrus and pear side along with a very long finish that combines mineral, citrus and perfect acidity. The food pairings are practically unlimited. We are thinking roast chicken for starters.
