This is the first bottling Paul has made from his small "791" parcel in the village of Dizy, and it is freaking remarkable. We are one of only a few stores on the planet to be offering it, and our supply will go fast.

We are huge fans of Paul Froissart and, wow, does he have a good one here!
Really crystalline, pure, and very, very long, this Premier Cru bottling of 100% Chardonnay is hyper-fresh and floral with rapier acidity. Deeply mineral, one of our tasters opined that it presents like a sparkling Grand Cru Montrachet!
Incredible chalk and limestone mineral notes are deep, interwoven and dazzling. The autolytics are classic. There are complexities of yellow apple, lemon Danish, button mushroom, wildflowers, saffron and candied ginger. As it warms in your glass, the salty, penetrating palate really turns up to 11. Ripe and rich, it has a heady mouthfeel and outrageous acidity. There's something unique to the texture of this wine, and we really love it.
"The first release of this cuvée, the NV Champagne 791 Extra Brut is pure Chardonnay from Dizy that was raised half in amphora and half in 500-liter barrels, and although it’s been released as a non-vintage wine, it’s solely from the 2021 harvest. The nose offers a complete and refined, layered profile with notes of lemon meringue, almond pastry, peaches, and smoky, salty earth. Medium to full-bodied, it’s both fresh and powerful, with a harmonious feel as it expands through the palate, an elegant mousse, a silky texture, and a long, saturating, mineral-inflected finish. This is an incredible addition to the range and is one of the best wines Paul has made so far. Bravo. 3 grams per liter dosage.”

"Very yoghurty and citrusy, with a bright yellow-grapefruit aroma and buttery notes. Medium body with fine, persistent bubbles and bright citrus flavors. Yet a tight, extracted mid-palate, where the power is well balanced on the finish by the silky texture and mineral aftertaste. 100% chardonnay. Disgorged in 2023. Dosage 3g/L. Drink or hold.

"Originally a part of the legendary Piper-Heidsieck Champagne house, Rare is moving their Champagne Millésime to a new brand and want it to stand alone. (Think Delamotte and Salon.) The 13th vintage for this cuvée, the 2013 Champagne Millésime is a blend is 70% Chardonnay with the rest Pinot Noir, with the majority of the blend coming from the Montagne de Reims Grand Cru and Premier Cru. A bright yellow hue, its aromatics are exquisite and well-balanced, with fresh notes of key lime, candied apple, fresh croissant dough, fresh pineapple, and honeysuckle. Medium to full-bodied, it fills the palate with a rounded and supple texture and a pillowy mousse. It’s long on the palate and has a silky personality as well as a long, pristine finish. It has fantastic balance of decadence and freshness, and I could drink this all day. It’s going to have a long drinking window. Drink 2024-2044 and beyond. Disgorged December 2022. Maturity 2024 - 2045.”

"Quite restrained, fresh and very minerally, with aromas of white pepper, yellow apples, pineapple, linden tree, coconut, toast, roasted nuts and a hint of honey. Medium-bodied with pinprick bubbles, juicy and crisp acidity and great integration. Lemon flavors and a long, chalky, minerally finish that’s a bit austere in a very positive way. Drink now.”
