Brothers Quentin and Antoine Paillard are the eighth generation of their family to farm in Champagne, and they go to extreme measures to farm sustainably and craft complete, balanced wines that sing harmoniously in the glass.
While designated as a non-vintage, the majority of the fruit for this new "Les Parcelles" bottling comes from the 2020 vintage, as indicated by the "XX" designation on the label.
Pouring the hue of a delicious Vidalia onion, it is intriguing and gleaming in the glass. Notes of dried raspberry, golden raisin, lime zest, quince and minerals are enhanced by a fine stream of bubbles. Flavors of baked pastry, ginger snap, and Marcona almond are distinct on the palate, offering a quite infectious complexity that quickly brought us back for another sip of this bright, lifted wine.
A blend of 80% Pinot Noir and 20% Chardonnay from their Grand Cru vineyards in Bouzy, the wine was fermented in barrel prior to being allowed 30 months rest on the lees. Creamy in texture and quite nuanced and unique in style, the result is a wine of impact. This is the complete package!
Despite the small production and massive following, pricing of this gem remains quite reasonable. In most stores, in fact, you'd pay more for a run of the mill bottle of Yellow Label!

While the focus of the day is on their signature Les Parcelles non-vintage bottling, we also have a tiny amount of this single-vineyard Blanc de Blancs Vintage Champagne from Antoine and Quentin.
The 2018 Les Mottelettes was harvested from a small parcel of Chardonnay vines planted back in 1961. As with Les Parcelles, it was fermented in barrel. Aging, however, was for a full 48 months prior to disgorgement. We've not yet had a chance to try to this Extra Brut bottling. Just a few cases to offer today!
