Over the past year, Pieter Walser bottled over 40 wines using fruit from nearly 70 vineyards across South Africa. Today, at special pre-arrival prices, we bring you three of our favorites!

We lead off with a 98-case production Cabernet Sauvignon that is being imported into the states exclusively for Vin Chicago. Following that are two whites, including an absolutely singing new release of his fan-favorite "Moment of Silence" at a rocking good pre-arrival price.

2024 BlankBottle "But Why?" Cabernet Sauvignon

Pieter made just 98 cases of this impressive Cabernet, from ungrafted vines growing at an altitude of 750 meters above sea level, around the height of the famous peaks of Napa.

Pop the cork and you'll immediately be greeted with lovely layers of black cherry, redcurrant, plum, and toasty oak. The fruit notes nicely merge on the palate with a saline streak and a distinct Bordeaux note of graphite to create a strong, confident, and impressively lifted Cab.

Beyond all of that, the length of the finish is really quite remarkable. We joked about cutting short our plans to taste more of Pieter's samples so we could savor this one on our palates for a bit longer!

Thanks to some Vin Chicago magic, this 2024 bottling is priced nearly 20% lower than when we brought you "But Why?" three years ago. Looking online, we could not find even a single listing anywhere on the planet for this or the prior vintage. We're excited that Pieter agreed to send a supply of this our way. 2025 BlankBottle "Moment of Silence" White Blend

This beautifully lifted white is the best vintage of Moment of Silence we've ever tasted! A combination of Chenin Blanc from three different sites with Grenache Blanc and Viognier, this textural marvel is rich and plump while simultaneously retaining a mineral nerve that keeps it refreshing and light on its feet. Throw in a beautiful fruit basket of Anjou pear, white peach, lemon and a touch of mango, and you've got yourself something really special.

Moment of Silence has been a favorite of ours for years, and this 2025 vintage bottling demonstrates exactly why. Wines this good simply don't go for twenty bucks these days!

2025 BlankBottle "Ultra" Chenin Blanc

We started the email with "But Why?" and we end it with "But how have we gone so long without working with Pieter's sensational 'Ultra' Chenin Blanc before?"

As with the "But Why?" this is a tiny production. Pieter only crafted 93 cases of this gorgeous wine. The label pays homage to the farmer that grows the grapes for this wine, who is a big raver when he isn't busy harvesting. That type of energy is the basis for this wine. Unctuous, vibrant and smooth, it is a total blast to drink.

Fermented in amphora and older French oak, the Ultra then spent 10 months on its lees, giving a rich, crisp, lively Chenin Blanc texture. There are gobs of green apple, apricot, and baking spice flavors along with an undercurrent of clementine. Luscious and mesmerizingly delicious, it is enjoyable now and has the bones to age incredibly well.

As with the Cabernet, you won't find this tiny production wine anywhere in the country but Vin Chicago!
