On Long Island’s North Fork, in the tiny hamlet of Baiting Hollow, Master Distiller Richard Stabile does it right. He’s proud to declare that when he started in 2007, his was the 100th operating distillery in the United States. While that was not so long ago, the number has now swelled to over 3,000.

For one of our longtime wine importation partners, Richard crafted a special highly-wheated Bourbon. Following the requirements of the Bottled-in-Bond Act of 1897, it consists of grain from a single growing season, includes no coloring, was aged more than four years in a federally bonded warehouse, and bottled at precisely 100 proof. Originally selling in the $50 to $60 range, it is a “farm to bottle” effort with no corners cut!

For reasons unknown, the company that commissioned the Bourbon decided to discontinue the project. They offered a let's-get-it-gone price and we were able to snag a few hundred bottles. Today, we offer it to you for a bonkers over-50%-off price that beats every single listing on the market.

There is no shortage of indulgence here. Assertive notes of cherry, charcoal, vanilla crème, toasted marshmallow, marbled chocolate, cereal, dried apricot, banana taffy, cinnamon and hay stand tall, with the telltale softness of its ample winter wheat mashbill coming through on the easy, creamy finish.

Utilizing locally farmed Corn (60%), Wheat (33%) and Malted Barley (7%) - in this case from Long Island rather than Kentucky - Richard Stabile is fastidious in hygiene and all aspects of the fermentation and distillation.

With bold, clear flavors, a color that suggests more age than the required four years, and an oh-so-smooth finish, this craft spirit would be very competitive in the $40 to $50 landscape of Bourbon. When we found out what we'd be able to sell it for, we backed up the truck fast!
