Not only is Paul Froissart an extremely talented vigneron, he is one heck of a nice guy. As precise and refined as his wines are, we were expecting him to be a very formal, very reserved individual. What we found, however, was a warm, outgoing, vivacious person whose personality is as full of life as his wines.

The most highly rated wine ever produced by Paul, this bottling of his Cuvée 108 comes almost entirely from 2021 harvest fruit, and was disgorged early this year. We are beyond thrilled that he was willing to send a full 10% of his 300 case production to Vin Chicago. Awarding 96+ points, Jeb Dunnuck Champagne specialist Audrey Frick writes...

"The NV Champagne 108 Extra Brut takes us back to Verzenay. Entirely Pinot Noir, it has 15-20% reserve wine from 2019 with the base wine from 2021. It pours a bright silver straw color, and the nose is boisterous and exuberantly pure, with notes of framboise and wild raspberries, crushed roses, toasted bread, and delicate spice. Moving to the palate, it offers full-bodied richness, with a refined and pinpoint mousse, fantastic, mouthwatering mineral persistence, and a great, long finish. It is an exceptional wine that makes a bold statement in the range with incredible nobility and Pinot Noir spice. I would love to drink this alone or with a simple cheese course to meditate over the bottle. Drink 2025-2040. It saw 5 grams per liter dosage.”

This is the sole vintage Champagne in Paul's lineup, and it absolutely EXPLODES in flavor, texture and nuance from the first sip. It was the last wine we tasted when we visited the winery, and it left an indelible mark on our psyche.

So long, so beautifully long! Paul says this is a wine that is tight upfront and opens to show power and layers. To us, however, is was a knockout from the first sip.

Unlike the Cuvée 108, which is entirely Pinot Noir, this is made from a single parcel of Chardonnay vines growing in the village of Verzy. Simply put, it is Chardonnay from Pinot Noir land! Vinified in small barrels, the Cuvée 090 is only produced in vintages that have the character Paul wants, and it is the most limited production wine he makes. Of this 2020 bottling, a mere 50 cases were produced. We have 7 of those cases to offer you today.

While Paul suggest laying this in the cellar, we think you'll have a hard time keeping your hands off it. The only listing we could find anywhere on the planet was in Hong Kong where a retailer had 2 bottles in stock that they are offering for $126 each.
