Cooked in one of the very few all-copper three-column continuous stills operating in the Caribbean then aged in ex-Bourbon and Tennessee Whiskey barrels for over a decade, with contributions from barrels aged 25 years, the profile of this Rum is shockingly smooth, wonderfully familiar and just a little bit indulgent.

Notes of butter toffee popcorn, singed orange peel, coconut crème brûlée, walnut, and baked pear spiced with nutmeg and cardamom are all here.

Championing local ingredients and dancing to their own drum, the charming and well-

regarded Quincy Street Distillery crafts an inventive range of spirits at their home in Riverside, Illinois. Owner Derrick C. Mancini is a retired physicist from the Argonne National Laboratory. After that, making booze must come easy!

While many younger distilleries have luck in the realm of un-aged vodka and gin, we've tasted more than a few grim examples of "craft" whiskeys which are barely aged and accelerate the gain of color through additives or unnaturally small barrels. We find it deeply impressive that Quincy Street puts together an honest-to-goodness bottled-in-bond Whiskey, the first in Illinois!

This official designation ensures in-house distillation and aging without shortcuts, with aging for four years before bottling at a robust 100 proof. The grain in question is 100% malted rye. We love the backbone, sassy spice and complexity that rye gives, and this one is outstanding. Featuring notes of cherry tobacco, caramel apple, cinnamon, mint, iodine and green peppercorn, it is wonderfully spicy and shockingly long. Perfect for a Sazerac or a robust Manhattan, we love sliding Rye in anytime Bourbon comes across a little too soft or sweet.

Part of their Exceptional Cask Selection series, it is liquid gold unobtanium like this hyper-limited release of “Convocation” that is the backbone of the “Pappy of Rum” adulation received by Richard Seale and Foursquare team.

From a trio of 14-year-old barrels carefully chosen by Richard Seale from his home distillery, produced from both their double-retort pot still and continuous twin column Coffey still, this is the 28th release in his Convocation series and one of the highest regarded ever.

Time stops a little when you taste this. Bottled at 124, an impactful proof, you’ll ask yourself how it can be so easy and so delicate to sip. Heaps of molten raspberry, English toffee, roasted pineapple, German chocolate, banana, blood orange zest, golden raisins, macadamia oil, prunes, cocoa, ancho chili and black pepper flavors mask the alcohol impossibly well. It is an extraordinary beverage.
