What We Think

From a single ranch called Rancho Pelayo in northern Mexico's remote La Zona del Silencio, it takes about 15 years for the rare Lamparillo variety of agave plants to reach maturity. Painfully low-yielding, it takes about a whole plant to create one bottle. Move over grapes! Look for kaleidoscopic minerals, exotic fruit, roasted peppers, bruleed banana and more.
