(11/2023) The 2017 Extra Brut Pataphysique is a pure Pinot Meunier, harvested in Vrigny. It spent 3.5 years on the lees. The nose is a picture of white miso and white pepper on toasted sourdough with a touch of plum peeking through. The palate has beautifully fine mousse and such a protein vibe of umami that lends not only concentration but texture. Saltiness echoes and is held within that Meunier plumminess. Sergent manages once again to capture fullest fruit, fullest experession wiht a very light touch. Balanced, long, sustained, pure and honest. Zero dosage. Disgorged: July 28, 2022.
