Pali "Wild Series" Sta. Rita Hills Pinot Noir 2021

Our 'Wild Series' Pinot Noir is our most delicate expression of Pinot Noir made from grapes grown on our estate vineyard in the Sta. Rita Hills. The grapes were harvest at a lower ripeness to create balance at lower alcohol with bright acidity. The grapes were gently destemmed and crushed before they soaked, undisturbed in a cold environment to extract delicate color, flavor, aromatics and tannin. Once the fermentation began, the grapes were punched down by hand daily before the juice was pressed and aged for 180 days in 100% neutral French oak barrels. This wine is made using only native, natural yeast alive in the air and on the grapes. Nothing is added throughout the wine's elevage, resulting in a wine that is rich and complex with strong primary fruit flavors and acid, and remains unfined and unfiltered.
